The aduki bean is an annual vine widely grown throughout East Asia and the Himalayas for its small (approximately 5mm) bean. The growers most familiar in north-east Asia have a uniform red colour, but white, black, gray and variously mottled varieties are also known. Scientists presume Vigna angularis var. nipponensis is the progenitor. Genetic evidence indicates that the azuki bean was first domesticated in the Himalayas. It was cultivated in China and Korea before 1000 BC. It was later taken to Japan, where it is now the second most popular legume after the soybean.

In the UK, Australia, and New Zealand it is known as lucerne and as lucerne grass in south Asia. Alfalfa is a cool season perennial legume living from three to twelve years, depending on variety and climate. It resembles clover with clusters of small purple flowers. The plant grows to a height of up to 1 metre, and has a deep root system sometimes stretching to 4.5 metres. This makes it very resilient, especially to droughts. However, the plant exhibits "autotoxicity", which means that it is difficult for alfalfa seed to grow in existing stands of alfalfa. Therefore, it is recommended that alfalfa fields be rotated with other species (for example, corn or wheat) before reseeding.

Prunus amygdalus Batsch., Amygdalus communis L., Amygdalus dulcis Mill.) is a species of tree of the genus Prunus, belonging to the subfamily Prunoideae of the family Rosaceae and native to the Middle East. Within Prunus, it is classified in the subgenus Amygdalus, distinguished from the other subgenera by the corrugated seed shell. Almond is also the name of the edible and widely cultivated nut of this tree. Although popularly referred to as a nut, the almond fruit's seed is botanically not a true nut, but the seed of a drupe (a botanic name for a type of fruit).

Both beta-carotene and lycopene protect LDL cholesterol from oxidation, which may help prevent heart disease. Apricots contain nutrients such as vitamin A that promote good vision. Vitamin A, a powerful antioxidant, quenches free radical damage to cells and tissues. Free radical damage can injure the eyes' lenses. The degenerative effect of free radicals, or oxidative stress, may lead to cataracts or damage the blood supply to the eyes and cause macular degeneration. Researchers who studied over 50,000 registered nurses found women who had the highest vitamin A intake reduced their risk of developing cataracts nearly 40%. Apricots are a good source of fibre, which has a wealth of benefits including preventing constipation and digestive conditions such as diverticulosis.
